What you need :
2 ripe bananas – mashed
2 eggs
1 cup of buckwheat flour
1 cup wholemeal spelt flour
4 tsp baking powder
100 grams melted butter
1/3 cup milk ( almond or diary)
2 tsp cinnamon
1/2 cup dark choc chips (or white choc chips)
Method: Mash banana in a bowl, then add in eggs, melted butter and milk and whisk together. Then mix in flours, baking powder and cinnamon until just combined ( don’t over mix or the muffins will be tough) . Then gently stir in choc chips. Spoon into lined muffin trays and bake in a moderate oven for about 20 mins.
You may need to add in some more milk if it’s too dry – it depends on the size of your bananas and eggs.
- You can any type of flour – if you don’t like buckwheat (or dont have any) use 2 cups of Wholemeal Spelt, or 2 cups of Wholemeal Wheat flour – or 1 of each !
