Beef and Bean Stew
(serves 4)
What you need:
• 600g beef – diced
• 1 can chopped tomatoes
• 1 can Beans or lentils (borlotti work well)
• 1 large onion
– diced
• 3 celery sticks chopped
• 4 carrots chopped
• 1 x 500ml Stock – Beef or Vegetable
• 1 turnip, peeled, cubed
• ½ head cabbage – finely sliced
• 1 bunch kale or silver beet torn into pieces, ribs removed
• 2 bay leaves
• Few sprigs fresh thyme
• 1 cup water
• Olive oil
• Salt and pepper
• Fresh herbs to serve
What you do :
Put the olive oil in large cast iron pot (preferably with a lid). Season beef cubes with salt and pepper and brown meat on all sides. This will take around 10 minutes.
Add chopped veggies, tomatoes, stock, water and herbs and pop the lid on. Cook on a low -medium heat for about an hour and a half, stirring occasionally. Add beans about 10 mins before serving.
Add fresh herbs such as parsley, basil or chives to serve.
