What you need:
1 1/2 cups grated carrot
1 1/2 cups almond meal/flour
1 tsp baking powder
3 eggs
1 tsp cinnamon – ground
1/2 tsp nutmeg – ground
1 tsp vanilla extract
2 Tbs honey or maple syrup
3 Tbs Coconut Oil or melted butter
1/2 cup chopped walnuts
Orange Zest – from 1/2 an orange. (optional)
Method:
Whisk eggs in bowl, add in coconut oil/melted butter. Whisk in the cinnamon, nutmeg, vanilla, honey, and baking powder. Then stir in almond flour, grated carrot, walnuts and orange zest. Line a square cake tin with baking paper, spoon in mixture and spread evenly, cook in a moderate oven for 30-40 minutes.
