Lemon and Garlic Lamb Skewers
(serves 2)
What you need:
• 350g lamb leg, diced
• 1 red capsicum, cut into 2cm pieces
• 1 zucchini cut into 1 cm rounds
• 2 garlic cloves
• 1 lemon
• 1 large onion
• ½ tsp mint
• 2 Tbs Olive oil
• Mixed salad leaves
• 1 cucumber
• 8 Cherry tomatoes
• 2 Tbs hummus to serve
• 8 wooden skewers
What you do:
Thread lamb, capsicum, zucchini and onion alternately onto skewers. Combine the garlic, lemon juice and mint and olive oil in a large flat ceramic dish. Add skewers and turn to coat in the marinade. Season with salt and pepper. You can pop these in the fridge for 30 minutes, if time permits.
Cook on BBQ or under a grill for 5-7 minutes each side until done. Mix the salad leaves, cucumber and tomatoes, drizzle with lemon juice and a little olive oil to taste.
Add the salad and skewers to the plate and serve with hummus
