What you need:
• 1 cup sunflower seeds
• ½ cup linseeds (flaxseeds)
• ½ cup almonds or hazelnuts
• 1 ½ cups of rolled oats
• 2 Tbsp. chia seeds
• 4 Tbsp. psyllium husks
• 1 tsp fine sea salt
• 1 Tbsp. maple syrup or rice malt syrup (use Stevia if sugar free diet required)
• 3 Tbsp. melted coconut oil or ghee, or butter
• 1 ½ cups water
What to do:
In a large bowl combine all dry ingredients and mix well.
Whisk together wet ingredients, then add to dry and mix well. The dough should become thick. If it looks too thick and dry add an extra teaspoon or two of water.
Pour dough into a flexible silicon loaf pan, or other loaf pan. Allow to sit at room temperature for 2-5 hours.
Bake at 175 degrees for 20 mins, then remove from loaf pan and place directly on rack to cook for a further 30-40 minutes. The loaf is ready when you tap it and it sounds hollow.
Allow to cool before slicing (its very hard to resist !)
