Pork Mince Stir Fry
(serves 4)
What you need:
• 600grams lean pork mince
• 2 Tbs Olive Oil (or coconut oil)
• 1 large Leek or Onion or finely sliced ( or both !)
• 2 cobs corn – kernels removed
• 2 carrots – sliced
• 1 red or green capsicum finely sliced
• 2 cups bean sprouts – rinsed well under water
• ½ small cabbage – finely sliced
• 1 bunch bok choy – sliced
• 1-2 Tbs fresh grated Ginger
• 2 garlic cloves – crushed
• 2 Tbs tamari
• 1 Tbs mirin
• Chopped Coriander to serve
• Chili Flakes to serve
What you do:
Place oil in a large saucepan on medium heat – cook leek/onion for a few minutes then add pork mince breaking it up and cook until browned. Then add garlic and ginger, cook for 2 minutes longer, then add carrot, corn and capsicum, and cook for 5 more mins. Add in mirin and tamari, then beans shoots, cabbage and bok choy and put the lid on, cook for 5 mins. Stir coriander to serve. Top with Chili if desired.
