Salmon/Tuna Patties
What you need:
5-6 desiree potatoes, scrubbed (can use ½ sweet potato if preferred)
1 large tin red salmon or tuna
½ Tbsp lemon juice
3 shallots, finely sliced
2 Tbsp ground Chia seed (helps to bind)
½ cup chopped coriander, or parsley, or tarragon
rice flour to dust (or buckwheat flour)
2 Tbsp olive oil to cook
What you do:
Cut the potatoes into quarters and cook for 20 – 25 minutes until they are soft, then Mash. Add in tinned salmon or tuna, ground Chia, shallots and herbs of choice and mix until the mixture is well combined. Using your hands, form small patties approximately 6cm in diameter. Dust/coat with some rice flour . Heat a non stick pan with a little olive oil and cook the patties for 3 – 4 minutes on each side. They can be a bit delicate, so be gentle when turning. Don’t overcrowd the pan. Serve with an accompanying green salad or Veggies.
• there is lots of options with these – you can add in more veggies if you like – mashed cauliflower, grated zucchini, corn kernals
• Experiment with different fish, try hot smoked salmon – it’s a stronger taste
a teaspoon or two of seeded mustard goes well with tarragon
