Simple Minestrone soup
(serves 2)
What you Need
1Tbs Olive Oil
1 small onion
– diced
2 cloves garlic – crushed
2-3 rashers of bacon – diced
1 small carrot, diced
1 celery stick, sliced
1 potato diced
1 turnip diced
1 zucchini, diced
400gm can crushed tomatoes
500gm water
or stock
1 can cannellini beans, drained
few springs parsley to garnish
salt and pepper to taste
What you do
Place olive oil , onion, garlic and bacon into heavy based saucepan and fry for 3-4 minutes.
Add carrot, celery, and cook for 3 more minutes.
Then add potato, turnip, zucchini tomatoes and water/stock and cook for 10 mins on medium –low heat.
Add beans and cook for a further 10 minutes
Add salt and pepper and garnish with parsley
* Great to have for lunch or freeze in portions.
